Conte Hugues Chardonnay Sicilia DOC Organic is a Sicilian white wine with strong personality, and it stands out for the excellent quality of the grapes, despite the dry climatic conditions. Careful vineyard management allowed the grapes to reach balanced and complete ripeness. Its aromatic profile is broad, elegant and well supported by natural freshness. It is a structured, smooth wine with an interesting ageing potential.

Production area
The grapes come from Camporeale, in the province of Palermo, Sicily. The vineyards are located at around 500 metres above sea level.

Food pairings
Ideal with white meats, served either hot or cold. It pairs well with shellfish and structured seafood dishes. Excellent with smoked fish and richly aromatic preparations. It also complements foie gras and full-flavoured dishes with elegance. An interesting match with blue cheeses or mature cheeses.

Vinification and refinement
The grapes are harvested in August when they have reached full ripeness. White vinification is carried out with gentle pressing of the grapes. The free-run must undergoes cold static clarification. Alcoholic fermentation begins in stainless steel tanks. After two thirds of fermentation, the wine is transferred to French oak barriques, where it ages on its lees for over ten months.
Tasting notes
It shows a bright, pale golden colour. On the nose, it offers generous fruity and sweet sensations typical of Chardonnay. Elegant oak-derived aromas add complexity to the bouquet. On the palate, it is smooth, enveloping and rich in Mediterranean nuances. The finish is long, persistent and supported by a broad, satisfying structure.
